Shrimp and Cherry Tomatoes

Shrimp and Cherry Tomatoes

This recipe takes less than 20 minutes, I promise!  Perfect for a quick dinner or even for work lunch.

I’m a huge fan of sweet and savory and this recipe offers just that.  The spices compliment the sweet cherry tomatoes perfectly.

Ingredients:

  • 4-6 tablespoons of vegetable oil
  • 15-18 large shrimp (peeled and deveined)
  • A handful of cherry tomatoes (about 10-12)
  • 1/4 cup of chopped onion
  • 1 teaspoon minced garlic
  • 1 teaspoon chopped jalapeño
  • 1/2 teaspoon of cumin powder
  • 1/2 teaspoon of coriander powder
  • 1/4 cup roughly chopped fresh cilantro
  • 1 tablespoon of chopped scallion (optional)
  • Salt and pepper to taste

Instructions:

  • Toss the shrimp with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper and set aside.
  • Heat a skillet over medium high heat.  Once hot, add 2 tablespoons of oil.
  • Add the shrimp and fry for about 3 minutes each side.  Once lightly brown on each side take it out and set it aside.
  • In the same pan, add the remaining oil, garlic, jalapeño and 1/4 teaspoon of salt.  Fry for about a minute.
  • Add the chopped onion and fry for another minute or two, until the onion is translucent.
  • Add cumin and coriander and fry for 1 minute.
  • Add the cherry tomatoes and sauté for 5 minutes.
  • Add the shrimp back to the pan and saute for 3-5 minutes.
  • Turn off the heat and add the fresh cilantro while pan is still on the stove.

Serve with some white rice.
