This recipe takes less than 20 minutes, I promise! Perfect for a quick dinner or even for work lunch.
I’m a huge fan of sweet and savory and this recipe offers just that. The spices compliment the sweet cherry tomatoes perfectly.
Ingredients:
- 4-6 tablespoons of vegetable oil
- 15-18 large shrimp (peeled and deveined)
- A handful of cherry tomatoes (about 10-12)
- 1/4 cup of chopped onion
- 1 teaspoon minced garlic
- 1 teaspoon chopped jalapeño
- 1/2 teaspoon of cumin powder
- 1/2 teaspoon of coriander powder
- 1/4 cup roughly chopped fresh cilantro
- 1 tablespoon of chopped scallion (optional)
- Salt and pepper to taste
Instructions:
- Toss the shrimp with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper and set aside.
- Heat a skillet over medium high heat. Once hot, add 2 tablespoons of oil.
- Add the shrimp and fry for about 3 minutes each side. Once lightly brown on each side take it out and set it aside.
- In the same pan, add the remaining oil, garlic, jalapeño and 1/4 teaspoon of salt. Fry for about a minute.
- Add the chopped onion and fry for another minute or two, until the onion is translucent.
- Add cumin and coriander and fry for 1 minute.
- Add the cherry tomatoes and sauté for 5 minutes.
- Add the shrimp back to the pan and saute for 3-5 minutes.
- Turn off the heat and add the fresh cilantro while pan is still on the stove.
Serve with some white rice.
