I found this gem of a place about 7 years ago. I still remember going there on a snowy February evening. There was a blizzard in New York, so I left work early and decided I NEEDED some French food. Cafe Champignon…. it was love at first bite and has been my go to French Spot since then.
How pretty is that taco? And it tastes just as good 🙂 🙂 Growing up in Queens, NY has taught me well about authentic tacos. The taco trucks under the 7 train have always been my go to spot for a late night snack/meal. These tacos are so simple and fresh. They are never loaded
So I made this for a friend’s 4th of July bbq and totally stole the show (totally unintentionally!). My friend’s bbq was in a whole different state, which made it a bit trickier. I really wanted to contribute to the menu, but needed something that would carry well in the summer heat and everyone would love.
