With a good amount of avocado and greek yogurt, you’ll be at peace knowing you had a healthy meal. I took it up a notch by adding some jalapeño and garlic to my fried egg, but it’s just as good without that extra punch.
Ingredients:
- 1/2 of avocado sauce (Avocado Sauce)
- 1/4 lb of thin spaghetti or any other pasta of your choice
- A handful of chopped fresh cilantro
- 1 egg (2 if you are really hungry)
- 1 tablespoon of oil (2 if you’re frying 2 eggs)
- 1/4 teaspoon of minced garlic (optional)
- 1/4 teaspoon of minced jalapeño (optional)
- Salt and pepper to taste
Instructions:
- Cook pasta according to package instructions (this depends on what kind of pasta you’re using).
- While the pasta is cooking, heat a small pan on low heat. Let the pan get hot (don’t skip this part, as that may cause your egg to stick).
- .Once the pan is hot, add the oil and let it get hot (about 1 minute on low heat).
- Add the minced garlic and jalapeño and fry until fragrant, but don’t let it turn brown (a little less than a minute).
- Crack the egg in there, sprinkle salt on it and cover.
- Cook the egg covered for 3-4 minutes (per your preference, I like my yolk runny).
- Once the pasta is done, mix it with the avocado sauce and fresh chopped cilantro.
- Transfer the pasta on a plate and top it with the egg.
