Basil Pesto Pasta with Chicken

This recipe is great for a quick dinner on those busy weeknights.  Since this can be eaten cold or room temperature, it’s also a great option for outings or picnics.

Remember how I said make your pesto in big batches?… Basil Pesto… this is why.  This is where your pre-made pesto comes in handy.  This recipe is pretty much throwing a buncha pre-made stuff with freshly cooked pasta in a bowl 🙂

Ingredients:

  • 1/2 lb thin spaghetti (or any pasta of your preference)
  • 1/2 cup of Basil Walnut Pesto
  • A handful of chopped sun dried tomatoes (about 1/4 cup)
  • 1/4 cup of grated parmesan cheese
  • 1/2 cup of roasted chicken, shredded into big chunks with fork

Instructions:

  • Cook the pasta per box instructions (it depends on the kind of pasta you’re using)
  • Reserve 1/2 cup of cooked pasta water
  • In a bowl mix pasta, pesto, sun dried tomatoes and the chicken.  Add a splash of reserved pasta water.  This really helps moisten and coat everything.
  • Sprinkle with the parmesan cheese.
  • Enjoy!
