Dill Mayonnaise

30 seconds!!… Yep that’s all it takes to make this delicious, light, creamy mayonnaise.

I got the recipe from theviewfromgreatisland.com.  This goes really well with any kind of seafood, or poultry dishes.  I loved it on my salmon burgers.

Ingredients:

  • 1 pastuerized egg, at room temperature
  • 1 cup mildly flavored olive oil, also room temperature
  • a handful of fresh dill
  • salt and pepper to taste
  • a squeeze of lemon, about 1 tbsp

Instructions:

  • Put all the ingredients in a jar/bowl.  Use a immersion blender and blend until the mixture comes to a thick creamy consistency, about 30 seconds.
