There really isn’t much to say about this recipe. Everyone loves it, you can use it in hundreds of different ways and it’s super easy to make. It stores really well, so make a big batch of it and freeze it for up to 3 months!!
This is an absolute must have for me. It’s so easy to make, take a few ingredients and a few pulse in the food processor. Since you can freeze it, you can make a big batch of it and you’re set for months.
Ingredients:
- 2 cups of fresh basil leaves
- 2-3 cloves of garlic
- 1/4 cup of lightly toasted walnuts (you can also use pine nuts)
- 1/4 cup of freshly grated parmesan cheese
- 1/2 cup of olive oil
- Salt and pepper to taste
Instructions:
- Add the basil, walnuts and garlic to the food processor.
- Pulse a few times to process all the ingredients.
- With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is thoroughly pureed.
- Add the parmesan, salt and pepper and give it a few more pulse to mix.
**Note:
Store it with a thin film of oil on top.
